Classes, Filming, Moe's Monday, Salmon Recipe

Good afternoon! I hope that your weekend was fun and relaxing, whether you spent it going out or binge watching your favorite show on Netflix. I woke up this morning and looked out the window and the weather is cold and dreary and it's Monday. Mondays aren't known as being anybody's favorite day of the week, but they are just a part of life. I'm just going to tell you about my Monday for today's post!

So I woke up this morning and filmed my Fall Morning Routine Video for my channel, so be looking for that in the next two weeks! I forgot to film my morning workout but maybe I will just make a separate video for that. After I did that, I started doing work for my online psychology class. It isn't my favorite class, but it's alright.

I went to my two classes today and made an A+ on my media research paper! That was probably the highlight of my day.

After classes, David and I went to Moe's for lunch because MOE'S MONDAY! I had a free entree, so I got a junior burrito. That tomatillo salsa that I added to it was so good. If you haven't ever gotten their tomatillo salsa, get it next time you go.

We went to David's place and did homework. The end of the semester is coming quickly, so I have lots of tests and papers that are due in the next month. For dinner, I made lemon butter salmon and broccoli. It was so delicious and healthy! It is super easy.
Here is what you need for 2 servings:
• salmon
• 1/2 stick of butter
• a lemon
• salt
• pepper
• garlic
• parsley
First, preheat the oven to 375 degrees F.
Then, squeeze about 2 tablespoons of lemon juice into a pot with about some garlic powder (or fresh garlic), salt, pepper, and parsley. When the lemon juice is down to about 1 tablespoon, add the butter and let it melt.
Place the salmon on a piece of foil large enough to completely cover it and drizzle or brush the sauce over it. Fold the foil so that nothing leaks out of it while baking.
Bake for about 12 to 14 minutes, then open the foil and let the salmon broil for about 2 to 3 minutes.
There you have it! That is all for this recipe. Serve it with rice or potatoes and vegetable!

Until next time..

xx,
Amanda
